Russian Fudge Bars





INGREDIENTS

 
  • 3 1/2 Cups white sugar
  • 125 g Butter
  • 3 Tbsp Golden Syrup
  • 1/2 Cup skim milk
  • 1/2 tsp salt
  • 200 g condensed milk (half a tin)
  • 2 tsp vanilla essence
  • 200 g milk or dark chocolate

DIRECTIONS

1. Add everything except the vanilla essence and chocolate to a large sauce-pan over a medium heat. Heat for about 15 minutes, until the sugar dissolves, being careful not to burn the sugar. Once the mixture starts to bubble, keep it very gently bubbling for about 10 minutes. It will start looking quite glossy.

2. Remove from the heat, add vanilla, and mix with an electric hand-mixer for a couple of minutes.

3. Pour into a baking paper lined slice pan and refrigerate until set.

4. Cut the fudge into bars. Melt the chocolate and mix it until it's smooth and glossy. I use the microwave in 30 second bursts. Dip each bar in the chocolate to coat all over. Place on non-stick baking paper and return to the refrigerator to set.
